〜Gelato to savor the seed〜
Introducing a gelato to savor the seed, brought to you by SHUKA, a confectionery brand that turns old traditions into something new.
This is a new genre of plant-based gelato, made with a unique blend that uses "seeds" instead of animal-derived ingredients like milk.
We use the syrup infused with seed extract—a byproduct of the ancient food preservation technique of candying—and top each gelato with the seeds themselves, allowing you to enjoy the unique textures as well.
We created this with the hope that everyone can share in the happiness of eating gelato together.

1. Toroku Beans & Vanilla
Made with white runner beans from Hokkaido, sometimes called "beauty beans." This standard flavor combines a gentle taste and the naturally fluffy texture of the beans with the rich, mellow aroma of vanilla.
2. Mizuho Dainagon Azuki
Made with "Mizuho Dainagon Azuki" beans, cultivated exclusively in the former Mizuho district of Kyotamba Town. By simmering the beans without draining the cooking liquid, we have locked the rich flavor of the azuki beans into a smooth texture. A flavor that lets you feel the essence of Kyoto through a familiar taste.
3. Tanba Black Soy Bean
Made with famous Tanba black soybeans. We grind finely simmered black beans into a rich soy milk base, creating a rustic flavor that allows you to fully enjoy the natural umami and depth of the soybeans.
4. Cashew Nuts
Made with Indonesian cashew nuts. Roasting brings out their inherent sweetness, spreading a pleasant, nutty aroma throughout the creaminess. It also features the natural sweetness of unrefined raw sugar.
5. Super Green Pistachio
Uses only rare "super green" pistachios from Iran, a major production region. It features a rich yet refreshing taste, and as the name suggests, its vibrant green color is eye-catching.
6. Cacao Asiatico
Uses only Indonesian cacao beans from Kyoto's craft chocolate maker, "Dari K." While retaining a pleasant acidity, the addition of organic coconut sugar provides a fruity, deep flavor.
