〜Gelato to savor the seed〜
From SHUKA, a seed confectionery brand both old and new, comes a gelato to savor the seed.
This is a new genre of plant-based gelato, created using a unique blend that substitutes seeds for dairy and other animal-derived ingredients.
We use a syrup infused with seed extract—a byproduct of the ancient food preservation technique of candying—and finish each cup with a seed topping, allowing you to enjoy the texture as well.
We created this with the hope that everyone can share in the happy experience of enjoying gelato together.

1. Toroku Beans & Vanilla
Made with white runner beans from Hokkaido, sometimes called "beauty beans." A classic flavor that pairs the bean's naturally fluffy texture and gentle taste with the rich aroma of vanilla.
2. Mizuho Dainagon Azuki
Uses "Mizuho Dainagon Azuki," a variety grown exclusively in the former Mizuho district of Kyotamba Town. By cooking the beans without draining the liquid, we lock the rich flavor of the azuki into a smooth texture. A flavor that lets you feel the essence of Kyoto through its familiar, comforting taste.
3. Tanba Black Soy Bean
Uses black soybeans, a specialty of Tanba. We grind richly cooked black soybeans into a creamy soy milk base, creating a rustic, full-bodied flavor that highlights the inherent savory richness of the soybean.
4. Cashew Nuts
Made with Indonesian cashew nuts. Roasting brings out their natural sweetness, resulting in a creamy texture with a delightful, fragrant nuttiness. Unrefined raw sugar adds a natural sweetness.
5. Super Green Pistachio
Made exclusively with rare "Super Green" pistachios from Iran, a top-tier production region. It features a rich yet refreshing flavor, and as the name suggests, its vibrant green color is visually striking.
6. Cacao Asiatico
Made using only Indonesian cacao beans from the Kyoto-based craft chocolate maker, "Dari K." While retaining a pleasant acidity, the addition of organic coconut sugar creates a fruity, deep flavor profile.
